Here are the big 3 ramen broth type by region.
MISO RAMEN:
Hokkaido, which is the Northern Area of Japan
Broth is miso based with medium thick noodle and lots of vegetable.
SOYSAUCE RAMEN:
Tokyo, also Kyoto and Fukushima area are known for it’s Soybase ramen
Simple soy sauce base ramen with medium think noodle, with simple Chashu, Menma (bamboo Shoots), and Naruto, green onion.
TONKOTSU RAMEN:
Kyushu area especially Fukuoka, the southern part of Japan.
Thick porkbone broth base with thin noodle, with chashu, kikurage (mushroom), sesame

TONKOTSU RAMEN #1
Jangara Ramen (じゃんがらラーメン)
This one has to be my #1 Tonkotsu Ramen by far. It’s right by the Harajuku Station. Some people may not like the smell of pork base broth, but I have taken my American friends and Chinese friends to here and they all liked the broth of it, so I think it’s something many nationality of people like. This one is “Kyushu Jangara-九州じゃんがら” with toppings of Kikurage (kind of mushroom. Dark brown in pic), pork Chashu, pork belly Chashu, boiled seasoned egg, and green onion.
SOY SAUCE RAMEN #1
Ramen Ito (伊藤 製麺)
This soy sauce ramen is the simplest and greatest ramen. Their focus is great noodle. One unique thing about Ito’s ramen is when you see the bowl, you are like “Is this all the broth you get?”. It does feel it comes little less than normal. But their intent is to have you focus on noodle. The quality of Noodle is HIGH!! Noodle is just cooked right and smooth. The soy base soup is like a crystal clear like Deschutes River in Oregon. It comes with the Japanese leaks and pork chachu. Simple and honest ramen is here.

Hanada Ramen (花田ラーメン)
This is my Miso Ramen #1. I love the city of Ueno as I grew up here, but this ramen is quite new comer in Ueno. This miso ramen is not originally from Hokkaido, but this has everything Miso Ramen should have. Super thick Miso broth and you can also get it spicy version as well. Really warms you up in the winter. Thick noodle to grab the thick and rich broth of Miso. Toppings are slices of Japanese leaks onion and menma (seasoned bamboo shoots) and pork Chashu, with tiny hits of hot spice.
